Founder Shinichi Takase was inspired by soldiers using roofing tiles to grill wild herbs and meat, leading to the creation of "Kawara Soba" using aged Japanese roofing tiles and a unique recipe. This dish features green tea soba elegantly garnished with beef, shredded egg, seaweed, grated maple leaves, lemon, and other toppings, served with a slightly sweet original broth, allowing for a delicate balance of flavors.
