Authentic Ramen Made With Dashi Broth Cultivated in Japanese Cuisine
Located about a 15-minute walk from JR Ino Station in Takasaki, Gunma Prefecture, "Koiki Salt Ramen" specialises in additive-free ramen that brings out the natural umami of ingredients such as kombu kelp, carefully balancing flavours for maximum synergy. The noodles, developed in collaboration with the long-established "Yamagishi Seimen", are known for their smooth texture and firm bite, perfectly complementing the "shio-dashi" broth made from red sea bream and clams. Toppings include premium "Gunma Mugi Pork" chashu and a rich egg from "Iwata Poultry Farm". The menu also features hand-pressed sushi and "Ramen Kaiseki", reflecting the owner's background in sushi and traditional Japanese cuisine.

A Unique "Kaedama" (Second Bowl of Noodles) and Recommended Ways to Eat It
There are three types of "Kaedama" (favourite noodles): "Shio Kaedama," "Soy Sauce Kaedama," and "Tosa Vinegar Kaedama." They can be eaten as is, added to soup to change the flavour, or enjoyed as tsukemen. The noodles, which boast a perfect blend of aroma and flavour, are made using domestically produced wheat and whole wheat flour.

A Popular Salt Ramen Specialty Restaurant in Gunma
The salt, the key to the flavor, is harvested from Christmas Island, a coral reef island 2,000 km south of Hawaii. The sun-dried sea salt, which is slowly formed by the sun and wind directly below the equator, is rich in minerals and has a mellow, gentle taste. Its soft, melt-in-your-mouth texture and sweetness make it popular with women and foodies.
