Traditional Techniques Refined Through the Chef's Innovative Approach
The owner, a certified sake sommelier, moved to Tokyo after graduating from a culinary school in Hiroshima and trained for about seven years at Japanese restaurants in the city before opening the establishment. While respecting tradition, the cuisine offers a contemporary approach that transcends conventional boundaries, featuring a range of signature dishes centered on seasonal ingredients.
Carefully Selected Seasonal Ingredients Throughout the Year
The menu features carefully selected seasonal ingredients, including sea urchin from Hokkaido, Koshihikari rice from Tokamachi in Niigata, and "Tankuro beef" from Fukushima. Particular attention is given to the rice, with the owner personally visiting the production area and taking part in planting and harvesting. Some dishes are finished over charcoal right at the counter, adding a sensory element to the dining experience.
