"Yamawasabi Soba" with Horseradish Grated to Order
Made with buckwheat flour milled together with the husks at extremely low speed in a stone mill from whole buckwheat grown in Kamikawa, Hokkaido, surrounded by the Daisetsuzan mountain range, the soba has a robust flavor. Each morning, the owner freshly makes, cuts, and boils the smooth handmade soba. The signature "Yama Wasabi Soba" is generously topped with Hokkaido-grown mountain wasabi grated to order and is well received by regular customers for its distinctive flavor, while also offering visitors a taste characteristic of Hokkaido. The sharp, refreshing heat of the mountain wasabi pairs especially well with the soba, whose sweetness becomes more pronounced with each bite.
