Unwinding with Food and Wine

Bistro Rendez-vous
Creative French Cuisine with Japanese Influences
In Sakae, one of Nagoya's major entertainment districts in Aichi Prefecture, "Bistro Rendez-vous" is a great choice for a leisurely dinner. The restaurant combines French culinary techniques with Japanese sensibilities, serving dishes that bring out the natural qualities of each ingredient. Its calm atmosphere provides a comfortable setting for enjoying wine and spending a relaxing evening.
Unwinding with Food and Wine
The dining room has a relaxed atmosphere, with the aroma of food in the air and a setting that feels both welcoming and stylish. Choosing a wine to pair with each dish is part of the pleasure of dining here. The "Chef's Choice Course" presents a sequence of dishes selected by the chef, while the à la carte menu offers dishes to suit the mood of the day. The comfortable setting invites leisurely meals and conversation around the table.
Tabiiro’s picks: signature dishes
Rich Umami in "Pan-Seared Spanish Mackerel with Grilled Eggplant and Mushroom Sauce"
Seasonal Spanish mackerel is presented with a contrast of savory browning and moist, tender flesh. The fish is sautéed in a pan until browned on the surface, then finished in the oven to retain its moisture and achieve a plump, tender texture. A sauce of roasted eggplant and mushrooms complements the fish, combining seasonal vegetables with kombu dashi broth to build layers of umami while keeping the flavor light yet complex. Rather than using a rich sauce made with butter or similar ingredients, the dish pursues flavors that naturally suit Japanese tastes, allowing the character of the Spanish mackerel to come through in a style characteristic of "Bistro Rendez-vous".

Fresh-Tasting Accompaniments
The accompaniments feature an abundance of seasonal vegetables and herbs from farms in Aichi Prefecture. The selection changes with the season to showcase what is at its best, with fresh flavors that further highlight the qualities of the Spanish mackerel.
Popular pairings
"Chef's Choice Course (7 Dishes, Food Only)"
The "Chef's Choice Course (7 Dishes, Food Only)" features seven dishes created from ingredients available that day and season, shaped by the chef's sensibility. The progression includes an amuse-bouche, appetizer, two warm dishes, fish course, main course, and dessert. Rooted in French techniques, the cooking incorporates "Japanese flavors" such as regional dishes from across Japan and dashi, resulting in food that feels innovative yet somehow familiar. The flavors become more comforting with each course, while the menu remains light enough to enjoy through to the end. Seasonal ingredients are paired with wines suggested by the chef, who is also a certified sommelier, creating dishes unique to that particular moment.
Must-try signature dish
-
"Wild Boar and Chestnut Hamburg Steak"
A hearty wild boar hamburger steak is filled with chestnuts, a favorite food of wild boars, expressing the scene of "a wild boar eating chestnuts" on the plate. Natural sake (sake brewed with an emphasis on natural ingredients) adds depth, while wrapping the meat in caul fat before roasting helps retain its juices and creates a plump, succulent texture that highlights the robust flavor of wild boar. The rustic character of the meat and the gentle sweetness of chestnuts come together in one of the restaurant's specialties, filled with playful touches and thoughtful detail.

A chef-selected drink that pairs beautifully with the cuisine
The Restaurant's Wine Selection
The chef, who is also a certified sommelier, selects wines without being bound by categories such as classic or natural, placing the greatest importance on one question: "Do we find them delicious?" Only wines that pair well with the food and that the team can recommend with confidence make the cut. The diverse lineup also gives diners the pleasure of discovering wines that appeal to their individual tastes.

The perfect drink, found through conversation
Making the Most of Wine
Rather than offering a wine list, "Bistro Rendez-vous" places an emphasis on conversation. The chef offers recommendations tailored to each guest's preferences, mood that day, and the dishes they're enjoying. Even a casual comment like "I'm in the mood for something like this today" can introduce you to a wine you might never have chosen on your own.
Interior
Set on the second floor of a retro building in the entertainment district, the restaurant has understated signage and a hideaway-like feel. Seating includes tables with striking matte red tops and a stark, mortar-finished counter, with each seating area designed to have its own atmosphere. The space is thoughtfully designed, with subdued lighting meant to help guests focus on the food, wine, and conversation with the person across from them.
A message from the owner
I was so taken with one chef's approach to cooking that it inspired the creation of this restaurant. Having trained at Michelin-starred restaurants, our chef draws on French culinary techniques, subtly incorporating kombu dashi and Japanese seasonings to create dishes with layers of umami. The "Rendez-vous" in our name means a meeting. Why not meet someone you care about here after work or on an anniversary? Here in a corner of a retro building, an evening that's just a little out of the ordinary awaits you.
From the Tabiiro Editorial Team
When I first visited, I was immediately struck by the atmosphere. But the appeal went beyond the setting. I was also captivated by the many facets of the cuisine and found myself wondering, "What dishes might I discover next time?" I'm sure you'll find different ways to enjoy the restaurant depending on who you're with and the occasion. It's the kind of place that makes you want to return for both the food and the atmosphere, with a sense of anticipation about what each visit might bring. Relax and enjoy a dish and a dining experience you can find only here.
