Tabiiro’s picks: signature dishes
"NiCo Special Mix Monjayaki" with Six Different Ingredients
The signature "NiCo Special Mix Monjayaki" features six ingredients: shrimp, squid, octopus, chikuwa fish cake, pork, and corn. Made with a base of cabbage, shredded squid, and tempura bits, it has a rich flavor. Priced lower than adding the toppings individually, it is a popular choice among diners. It contains no sakura shrimp, making it easier to choose for those with a related allergy. The restaurant's sauce and dashi soy sauce can be combined with the salt, pepper, and shichimi chili pepper provided at the table to adjust the flavor to individual preference. Generously portioned, it is also a recommended choice for a first visit.

The Owner's Dedication Behind the Special Sauce
The restaurant's sauce is based on flavors long enjoyed in Hyogo Prefecture, the owner's home region, and refined through repeated blending. Created from the desire to "serve delicious food," the sauce pairs well with okonomiyaki and is also recommended with carbonated drinks such as beer and sours.
-
Richly Flavored Dashi Soy Sauce
Several kinds of soy sauce are blended, while the dashi (Japanese stock) is carefully chosen from dozens of varieties. The combination is balanced to bring out the ingredients' natural umami and complements okonomiyaki and monjayaki especially well, making it a popular choice. Recommended for those enjoying shochu or sake, it also offers an alternative for anyone looking for a different flavor from the usual sauce.

A message from the owner
My love of food led me to a career preparing meals for others. Originally from Kansai, I've always enjoyed teppanyaki, so after moving to Tokyo, I gained experience at restaurants specializing in Hiroshima-style okonomiyaki, monjayaki (a savory Japanese griddle dish), and creative teppan-style izakaya. Drawing on that experience, I opened my own restaurant where people can enjoy a variety of dishes cooked on an iron griddle. I hope you'll visit us for all kinds of occasions and that our restaurant becomes part of your cherished memories of Ningyocho in Nihonbashi, Tokyo. I look forward to welcoming you.
From the Tabiiro Editorial Team
The flavors are defined by an original-blend sauce and dashi soy sauce developed by the owner in Kansai. The okonomiyaki batter is formulated to produce consistent results with little variation between cooks. Along with monjayaki, the menu includes a wide range of creative dishes and drinks suited to different occasions. Conveniently located near Tokyo Metro Ningyocho Station, the restaurant offers something new to discover with each visit.
