Edomae Sushi That Continues to Evolve with Fresh Ideas
At "Sushi Kurogane," the head chef's sushi embodies the belief that "the way nigiri goes down is everything," with each piece crafted to bring the topping and sushi rice into seamless harmony. Drawing on years of experience, he selects the seafood in the best condition each day, so the menu changes accordingly. Rooted in Edomae sushi, the restaurant also incorporates dishes not often found at sushi restaurants, such as skewered tuna and green onion, creating new interpretations of Edomae sushi while respecting tradition.
Tabiiro’s picks: signature dishes
An Edomae Sushi "Omakase Course" Blending Tradition and Innovation
The "Omakase Course" includes sushi prepared by a head chef trained at a renowned Edomae sushi restaurant, around seven appetizers such as tuna and green onion skewers made with cheek meat from wild Pacific bluefin tuna, as well as miso soup and dessert. The conger eel nigiri, a specialty learned during his training, is made by simmering freshly prepared eel until tender, then grilling it just before serving to add a roasted aroma and deepen its flavor. The course ends with a nodoguro hand roll: fatty blackthroat seaperch grilled over charcoal with salt, finished with a squeeze of sudachi, and paired with sushi rice, nori with a pronounced ocean aroma, and a generous touch of wasabi.

A focus on harmony between the topping and sushi rice
Exceptional Dishes Made with Care and Attention to Detail
Wild Pacific bluefin tuna and other seafood in the best condition that day are selected by the chef and sourced from trusted wholesalers. The sushi rice combines two types of rice ordered directly from producers with a blend of three vinegars, seasoned only with salt and no sugar. Each piece brings this rice together with selected toppings for an exceptional balance of flavor.
Interior
A single-slab cypress counter in the refined dining room offers an up-close view of the chefs preparing sushi. American pop music, mainly from the 1980s, plays in the background, giving the restaurant an avant-garde atmosphere that sets it apart from traditional Edomae sushi establishments. Private bookings are also available, making it suitable for intimate dinners and anniversaries.
A message from the owner
Years ago, I visited a sushi restaurant on the U.S. West Coast and experienced a real culture shock when I saw famous Hollywood film directors and major actors eating sushi at the counter alongside local regulars. It felt less like a sushi restaurant and more like a hub for subculture. That unforgettable experience has stayed with me ever since and continues to inspire the kind of restaurant I want to create.
From the Tabiiro Editorial Team
At "Sushi Kurogane," each visit brings a different encounter with seasonal ingredients, making the experience about more than sushi alone. Each piece reflects the chef's dedication, while an eye for selecting the day's best ingredients and polished technique shape a memorable meal. Another part of the restaurant's appeal is the contrast between its refined setting and the American pop music sometimes playing in the background. It is a place for enjoying traditional Edomae sushi in a relaxed, individual way.
