Shabu-Shabu and Fish Dishes Near "TOKYO SKYTREE®"
The restaurant serves shabu-shabu and seafood dishes that bring out the natural umami of carefully selected ingredients, including Kuroge Wagyu, brand-name pork, and seasonal seafood. It also carries on the spirit of "Sakana Doraku Souma," which the owner’s mother ran for about 35 years, with a mission to share Japanese food culture with future generations and the world.
Dishes That Bring Out the Full Natural Flavor of Each Ingredient
At "Oshiage Souma," the Kuroge Wagyu and brand-name pork used for shabu-shabu are sourced each day based on which cuts are in the best condition, then prepared before service. The meat is assessed and sliced just before serving, resulting in a tender mouthfeel and melt-in-the-mouth texture. Seafood sourced from Toyosu Market is limited to selections that meet the owner’s standards for freshness and quality, reflecting an approach to cooking inherited from his mother.
