The meticulously crafted course consists entirely of sushi, served amid celebrated Japanese craftsmanship, including a lacquered counter created by a Kyoto Buddhist sculptor.
A Sushi Chef's Dedication to Preserving Traditional Techniques
The owner trained under the fifth-generation head chef of Bentenyama Miyako Sushi, a long-established restaurant dedicated to preserving classical Edomae sushi techniques, and studied prewar Kyoto-style sushi at Fukuyama Sushi, one of Kyoto's leading establishments. Each piece blends the Edo tradition of "consideration for others" with Kyoto-style techniques shaped by court culture, expressing a deep respect for Japanese culture.
A Single Calligraphy Work Completing the Interior
Surrounded by silence, the interior showcases a range of Japanese traditional arts. Calligraphy by Nitten artist Seiun Takeuchi is displayed behind the counter, adding dignity and a sense of openness to the space. The mysterious presence of the calligraphy and the owner's precise movements complement one another, lending distinction to the gently passing time.
