A Long-Established Restaurant Preserving the Tradition of Edomae Tempura
"Tenkane" is a long-established Edomae tempura restaurant conveniently located just a one-minute walk from Shinjuku Station. Founded in 1903 by Kanekichi Ishinabe, who first opened a tempura stall in Yotsuya Igacho (near present-day Yotsuya 3-chome in Tokyo), it is now led by the fourth-generation owner, Jin Ishinabe. The restaurant continues to serve authentic Edomae tempura, preserving the same traditional flavours as at its founding. The interior conveys a simple yet dignified Japanese ambience, reflecting the weight of tradition carried through the generations. The exclusive "Ozashiki Tempura Course," offered at the counter with sunken kotatsu-style seating, provides a front-row view of the chefs’ refined techniques and is well-suited for memorable occasions with loved ones.
Each Dish Exudes the Store’s History With Its Traditional Flavor
The deep-frying oil is a unique blend based on "Tamajime Shibori Sesame Oil," made using traditional techniques dating back to the mid-Edo period. The tempura sauce is made with dashi stock made from bonito flakes from Makurazaki, Kagoshima Prefecture, and a "mototsuyu" (base sauce) that has been added to since the second generation. You can also enjoy the history of the restaurant, including the rice bran miso that has been passed down from the third generation for over 60 years.
A Sophisticated Appearance Filled With Japanese Aesthetics
The restaurant was constructed through a collaboration between Takashi Imazato, renowned for designing the "Ryogoku Kokugikan" sumo hall in Tokyo’s Sumida Ward, and Mizusawa Komuten, a leading builder of sukiya-style architecture. Its refined design highlights the natural textures of the materials, creating a sophisticated setting ideal for celebrating special occasions.
