Authentic Kanazawa Sushi Crafted With Select Fish, Rice, and Sake
With 28 years devoted to the culinary arts, this sushi kappo restaurant was reopened under the name "Sushiwaka" after its predecessor, "Aoisushi" in Kanazawa, concluded its long history. While carrying on the traditions of its former establishment, the restaurant continues to refine its craft each day. Seafood is purchased fresh each morning at the Kanazawa Port market, selected with a discerning eye for the very best of the day. The rice is an original blend formulated to harmonize with the toppings and provide an ideal texture. Guests can savor sushi unique to Kanazawa and the Hokuriku region, including blackthroat seaperch, "gasu ebi" (local shrimp), and snow crab. Lunch hours feature excellent-value set menus, and counter seating is available for those visiting alone.
A Calm, Japanese-Style Garden for Quiet Contemplation
The first floor, with its counter and table seating, is perfect for travel or everyday dining. The second and third floors are primarily for groups and have large, private rooms available for banquets, celebrations, and other special occasions. One of the rooms on the second floor is particularly spacious, featuring a window that offers a Japanese garden-style view.
Suitable for Group Banquets and Formal Gatherings
A "Banquet Course" is available for groups of four or more with advance reservations. The course features a generous selection of small dishes, grilled items, a half-portion of sushi, seasonal appetizers, vinegared dishes, sashimi, fried and steamed dishes, clear soup, and dessert. Additional options include an "Omakase Course" and a "Sushi Kaiseki" course, which serve as ideal choices when a guided selection is preferred.
