A Sushi Restaurant Known for Its Unpretentious Hospitality
Located approximately a 14-minute walk from JR Kanazawa Station, this sushi restaurant focuses not on the origin of ingredients but on sourcing the finest produce available each season. Each ingredient is carefully prepared through methods such as salt-curing, kelp-marination, light searing, low-temperature dashi infusion, or aging. The restaurant is known for its sushi made with two types of vinegared rice—"white shari" seasoned with rice vinegar and "red shari" made with red vinegar. The beautifully arranged "neta box (a display case of sushi toppings)," filled with seasonal ingredients selected from across Japan and replaced daily, is a delight to behold. Set inside a renovated machiya townhouse with over 90 years of history, the interior features earthen walls and antique bricks, offering a warm and inviting atmosphere wrapped in natural textures.
The Catchphrase "Oishii Take" Inspires New Sushi Creations
Charcoal-grilled shiitake mushroom sushi, fragrant and juicy, offers a taste and texture that rival seafood. Loved by regulars for its delightful surprise and rich flavor, it has even inspired a playful nickname—"Oishiitake." A must-try creation that’s carving out its own place in the world of sushi.
Sushi and Sake That Engage All Five Senses
The restaurant features an extensive drink selection, including sake from the owner’s hometown of Tosa City in Kochi Prefecture, sake brewed in Ishikawa Prefecture, and wines carefully chosen to pair perfectly with sushi. Take in the chef’s skillful craftsmanship at the counter and savour every element of the experience—sushi, sake, and atmosphere—through all five senses.
