"Kyo Udon Ishin" is a new udon restaurant that opened on January 1st, 2025. They use ingredients from Kyoto as much as possible, and offer a bowl of udon with the elegance and rich flavor of carefully prepared dashi. The noodles, developed in collaboration with a Kyoto-based factory, strike the perfect balance between chewiness and firmness. The harmony between the noodles and dashi, topped with freshly shaved bonito flakes, is exceptional. Their menu offers a great selection of hot and refreshing chilled dishes, including "Niku Udon (with sweet-simmered beef)" and "Kitsune Udon (with sweet simmered fried tofu) " as well as "Bukkake Udon (cold udon with soy-based sauce poured over)" and "Zaru Udon (Chilled udon with dipping sauce)" Enjoy Kyoto udon at your leisure in a restaurant that exudes the warmth of wood.
