The restaurant source "genuine soba" from Fukagawa City, one of Japan's top soba-producing areas, and handle all processes from sorting to stone-grinding in the milling room inside the restaurant. The owner's carefully crafted soba noodles have a distinctive, aromatic flavor, drawing visitors from afar. While the restaurant's specialties "Kakuni Soba (topped with braised pork belly)" and "Jo ten Zaru Soba (chilled soba and Tempra with dipping sauce)" are recommended, the popular menu item "Shime Saba Nigiri (3 pieces of nigiri sushi topped with pickled mackerel)" is also a must-try. The owner, who trained at a sushi restaurant in Kitami City, skillfully prepares the fatty mackerel with just the right touch of tartness.

Another signature dish is the reasonably priced "Shime Saba Nigiri (3 pieces - nigiri sushi topped with pickled mackerel)," available in limited quantities for takeout. The freshness of the mackerel is maintained in the store's ultra-low temperature freezer at -60℃ (-76°F), and you can enjoy the melt-in-your-mouth mackerel with a good amount of fat and a moderate acidity.
