This restaurant serves charcoal-grilled beef tongue and local chicken delivered directly from the source. The beef tongue with skin is delivered from Sendai, Miyagi, and the skin is removed one by one and carefully prepared. The prized tan-moto cut - taken from the base of the beef tongue and available only in small quantities per cow - is served as sushi with wasabi leaves and soy sauce, or as yukhoe with a sweet and spicy sauce and egg yolk. Recommended dishes include the "Charcoal-Grilled Thick-Sliced Beef Tongue", grilled thoroughly over binchotan charcoal, and the limited-edition "Braised Beef Tongue Char Siu Stew." Local "Tajima Chicken" from Hyogo's Tajima region is another highlight. It can be enjoyed as a sashimi-style "Tsukuri Moriawase (assorted platter)" or grilled, offering different textures and flavors from parts like the neck and skin. A set course with all-you-can-drink options is also available.
Two-Day-Aged Beef Tongue Grilled to Perfection
The beef tongue, delivered from Sendai City in Miyagi Prefecture, is carefully prepared by removing the skin from each piece by hand before slicing. Thanks to this meticulous preparation, it can be served raw in dishes such as yukhoe and sashimi. The thick-sliced beef tongue, seasoned and aged for two days, is thoroughly grilled over binchotan charcoal. Braised beef tongue dishes are also worth trying for comparison.
