The savoury broth that pools inside the shells is also a delicacy, enhanced with a touch of lemon or Tabasco for extra flavour. Oysters are sourced from various regions depending on the season, including Akkeshi, Senposhi in Kushiro Town, Shiriuchi, and Lake Saroma - offering the opportunity to compare subtle differences in taste.
