Charcoal-Grilled Eel That Inherited the Taste of Its Predecessors
Located about a 10-minute walk from JR Ueda Station, "Hamasei" serves domestic eel dishes like unaju (eel rice box) and shirayaki-don (grilled plain eel rice bowl), alongside seasonal vegetable tempura. The restaurant's light, flavorful tare sauce has been passed down through generations, enhancing the taste of the tenderly grilled eel. The menu reflects seasonal ingredients, offering a well-rounded dining experience.
Exquisite Grilling and Steaming Made With the Skill of the Owner
The restaurant uses high-quality binchotan charcoal for grilling unagi to enhance its natural flavor while minimizing smoke and odor. The unagi is steamed using the Kansai method, ensuring a soft texture. Each piece is carefully grilled to perfection and served freshly steamed.
Perfectly Cooked Koshi Hikari Rice From Tateshina Town
The rice is cooked fluffy using special A - rank Koshihikari rice from Tateshina Town. The rice, which is characterized by its strong stickiness and sweetness, is grown in an ideal environment for rice cultivation, including spring water from Mt. Tateshina, one of the longest sunshine hours in the country, a difference in temperature between day and night, and heavy clay soil, and is grown not only freshly cooked but also cold. Very delicious.
