A Niboshi Ramen Shop Constantly Bringing Fresh Innovation
This Niboshi (dried sardine) ramen restaurant is located about a two-minute walk from JR Kuji Station. It was founded with the aim of sharing the appeal of niboshi ramen by combining the thriving chicken culture of Iwate Prefecture with the niboshi culture of neighboring Aomori Prefecture. At the time, neither niboshi ramen nor "morning ramen" (ramen enjoyed for breakfast) was widely known in Kuji City, and the restaurant faced some challenging years. By embracing the philosophy of local production for local consumption, it sources "Orizume Sangen Pork Sasuke" from Iwate for its char siu, locally caught sardines for the broth, and noodles developed in collaboration with a social welfare organization. Through this commitment to regional flavors, the restaurant has become a local favorite, attracting guests of all ages with its diverse menu.
Committed to Local Production and Consumption
The broth is prepared using Niboshi (dried sardines) made from Kuji-caught Japanese pilchards and anchovies, gently simmered at a low temperature to draw out their full depth of flavor. The char siu features "Orizume Sangen Pork Sasuke," a premium pork from Iwate Prefecture. The noodles are developed in collaboration with a local social welfare organization that supports and employs people with disabilities.
A Renowned Spot in Kuji, Iwate, Known for Its "Morning Ramen"
Initially, Kuji City did not have a culture of niboshi ramen or "morning ramen," which is eating ramen early in the morning, so the restaurant had some hard times when it first opened. However, the concept of "niboshi ramen, morning ramen, and impactful presentation" gradually gained recognition, and the restaurant has now become a popular local spot.
