Located in Tamba-Sasayama, Hyogo, surrounded by abundant natural scenery, the long-established sushi restaurant "Morimotoya" sources live fish each morning, focusing on freshness, and keeps them in an in-house tank until preparation. Each order is prepared at its optimal moment to preserve peak flavor. The sushi rice, made with locally grown "Koshihikari" from Tamba-Sasayama and cooked in a gas kettle, is known for its distinct grains and delicate texture. In addition to sushi, dishes such as sashimi, simmered fish, and dobin-mushi are available, prepared with the day’s ingredients. A selection includes the locally brewed sake "Homei," known for its rich character.
Seafood Selected Directly from In House Tanks
Each morning, carefully selected live fish are sourced at the market based on extensive experience and discerning judgment, then meticulously managed in an in-house tank. Preparation begins only after an order is placed, allowing sushi and other dishes to be served while preserving peak freshness and the natural flavor of the fish.
Spacious and Clean Banquet Hall Suitable for Large Groups
Tatami seating across three adjoining rooms can be combined by removing the sliding partitions, accommodating gatherings of up to 40 guests for banquets and celebrations. Kaiseki-style meals that include sushi are also available, with menus tailored to budget and seasonal ingredients, making them suitable for occasions such as business dinners and memorial services. Outside items, such as celebration cakes, may also be brought in.
