Using mainly white-fleshed fish caught off the coast of Niigata, including blackthroat seaperch, along with top-grade ingredients such as wild bluefin tuna and sea urchin, the chef prepares refined sushi with careful technique. The sushi rice, made with Koshihikari rice from Iwafune, is also handled with close attention to the balance of vinegar and the amount of air incorporated. Built on years of experience, the craftsmanship is matched by bright, approachable, and comfortable service, earning praise for a dining experience that highlights the flavor of each piece.

The popular "Nanban Shrimp Bowl" is a lavish dish made generously with vividly colored, plump shrimp landed off the coast of Niigata. The carefully selected soy sauce is "Nanban Ebi Gyosho," a Niigata-made shrimp fish sauce that brings out the ingredients' natural flavor without overpowering them.
