A Long-Established Beef Tongue Restaurant Founded in 1979
Since opening in Yotsuya, Tokyo in 1979, this specialty restaurant has been loved by many for its exceptional beef tongue dishes. Located approximately a 7-minute walk from JR Yotsuya Station or Tokyo Metro Yotsuya-sanchome Station, it even attracts guests from afar who come especially to savor its famous flavors. The signature dish is the tender "Boiled Tongue," simmered for six to seven hours and seasoned simply with salt and pepper, served with wasabi to taste. The interior, featuring reclaimed wood, exudes a warm, nostalgic atmosphere, and the tatami seating in the back can accommodate up to 14 guests. Many visitors return again and again, drawn by the "unforgettable taste that lingers in memory."
A Warm, Retro-Style Interior with Timeless Charm
Shinobu, a beef tongue restaurant founded in 1979, has a nostalgic atmosphere. The interior, made with tasteful old wood, was designed with the concept of a "restaurant for life." Each piece of the interior, including the counter made of high-quality pine and the round tables made of hemlock, has been carefully designed.
Slow-Simmered "Boiled Tongue," the Restaurant’s Signature
The thick-cut "Yude Tongue (boiled tongue)," simmered gently for six to seven hours, is so tender it can be cut with chopsticks. Simply seasoned with salt and pepper, it highlights the natural flavor of the beef. Other popular choices include "Grilled Tongue," carefully cooked over binchotan charcoal, and "Tongue Stew," known for its rich, melt-in-your-mouth texture.
