Shodoshima's Food Culture, Centered on Tsukudani
Tsukudani no Eki Setoyoshi
つくだ煮の駅 瀬戸よ志
A Restaurant Run by a Shodoshima Tsukudani Maker
Operated directly by a tsukudani producer in Shodoshima, Kagawa Prefecture, this restaurant serves flavors unique to the island. With views of Kankakei Gorge, one of Japan's renowned scenic spots, the menu brings together Shodoshima's food culture through island-made hand-stretched somen noodles, the local specialty "Hishio-don," and, of course, a variety of dishes made with tsukudani.
Shodoshima's Food Culture, Centered on Tsukudani
Shodoshima has a long history of producing high-quality salt, which helped foster the island's many soy sauce makers. Production of tsukudani (foods simmered in a sweet-savory soy sauce) also flourished after World War II. Operated by Yasuda Shokuhin Kogyo, one of Shodoshima's major tsukudani producers, "Tsukudani no Eki Setoyoshi" houses both a shop and a restaurant. The same tsukudani sold in the shop is also used in the restaurant's dishes, including small side dishes served with meals and rice balls. It's a place to savor the local flavors of Shodoshima while exploring the island.

"Shodoshima Moromi Nori Rice Ball" with Fragrant Seaweed Tsukudani
The first bite of the "Shodoshima Moromi Nori Omusubi" (rice ball) releases a rich aroma of the sea and the savory depth of the tsukudani. The tsukudani is made with fresh nori seaweed from select growing regions, Shodoshima soy sauce, and sun-dried salt. Fluffy, freshly cooked rice gently surrounds the rich, sweet-savory tsukudani, creating a simple yet satisfying combination. This dish reflects the shop's deep expertise in tsukudani and offers a memorable taste of Shodoshima. Other rice ball varieties include "Golden Sesame Kombu," "Chirimen Sansho," "Katsuo Kombu," and "Iwanori" (rock laver).
