At "Lakeside Hot Spring Inn Kunibiki," kaiseki cuisine showcases carefully prepared dishes featuring fresh seafood from Shimane. Ingredients from the San’in region are used whenever possible, with dinner offering regional specialties such as local sushi, grilled nodoguro and Nitamai rice from Okuizumo. Breakfast is equally appealing, featuring items like sea bream yaki-shabu and shijimi miso soup. Depending on the season, snow crab from Sakaiminato may also be served, allowing seasonal flavors to be enjoyed with every visit.

We prepare seasonal kaiseki cuisine using delicacies from the mountains and seas of the San'in region, the food capital. We are particular about using locally produced and locally consumed rice as much as possible, such as using Nita rice for rice and fresh clams from Lake Shinji. It's also nice to be able to enjoy sweets made by a pastry chef for dessert after your meal.
