The Exceptional "Enju Beef," Rarely Seen Outside Its Origin
Among the rare Akaushi cattle of the Japanese Brown breed, "Enju Beef" is an especially scarce variety featured here as steak. Raised by "Harada Chikusan" in Kikuchi, Kumamoto, using independently developed feed, the beef combines tenderness with a relatively light character, while its clean, delicate fat delivers distinctive umami.
