The soup is made with a unique blend of sardines of different sizes and carefully made into a soup that is gentle on the body, without using any additives or chemical seasonings. The highly recommended "Rich Niboshi Tonkotsu Ramen" is the ultimate dish with a perfect balance of the "double soup" of dried sardines and pork bones. In addition, there is the "Tokuno Niboshi Tonkotsu Ramen," which is available in limited quantities and uses the "Ono Soy Sauce," a specialty of Kanazawa, where the bubbly hot water soup clings tightly to the noodles and allows you to enjoy the intense flavor and aroma of the dried sardines. There is also a light version called "Tanrei Niboshi Soy Sauce Ramen."
Signature Rich Niboshi Tonkotsu Ramen
The restaurant’s signature double broth begins with a pork-bone stock simmered at high heat using large quantities of pork bones, followed by further cooking with generous amounts of dried anchovies to draw out their rich flavor and aroma. The finishing touch is a stock made from premium Ibuki iriko, creating a deeply layered broth with remarkable depth and complexity. Rich and full-bodied yet balanced enough to remain smooth to the last sip, it showcases the distinctive character of this carefully crafted soup.
