Food Himi Udon A local delicacy known for it’s smooth texture!

Himi udon is a local style of hand-stretched noodles characterized by their high resilience and silky smooth texture. Thoroughly drying the noodles over the peninsula’s cold and windy winters gives them a pleasantly chewiness that lasts and lasts without turning soft. The slightly flat-cut noodles, which taste great served hot or cold, gently fill the mouth with the flavor of wheat when chewed. You can even find gift-boxed Himi udon noodles, which make great souvenirs.

Food Noto-don Support Noto’s recovery by ordering a dish made with local ingredients!

Noto-don, a dish that features ample fruits of the sea or the land served on rice, was created after the 2007 Noto Peninsula earthquake to help the region’s economic recovery. A wide variety of unique Noto-don exist, including seafood bowls topped with seasonal seafood, and roast beef bowls made with Noto beef. After the 2024 earthquake, Noto-don was revived as soon as restaurants were able to serve the dish again.
